Tomato Pearl Couscous

A fresh take on couscous with fresh cherry tomatoes and cremini mushrooms. This dish is perfect for a light summer dinner.


 


 

Ingredients

• 2 cups pearled couscous

• 1 cup vegetable stock

• 1/4 cup white wine or vegetable stock

• 8oz cremini mushrooms

• 2 cups cherry tomatoes

• Thyme

• Salt

• Pepper

• Olive oil

• Chili flakes

• 2 tbsp butter

• 1/2 onion

• Arugula


Optional:

• Parmesan for topping


Instructions:

1) Heat olive oil then sauté onions and garlic

2) Add in mushrooms, thyme & butter and fry for 5-8 mins

3) Pour in vegetable stock, wine & couscous then bring to a boil

4) Add in cherry tomatoes, reduce the heat and put the lid on pan. Leave for 10-13 mins

5) Sprinkle with salt, pepper, chilli flakes

6) Plate on top of a bed of arugula, sprinkle with parmesan and enjoy!
