Stuffed Mushrooms

This yummy recipe was recently taught to me by my Aunt. Loved this unique and flavorful side dish!
Ingredients:
1/2 cup Parmesan
5 Cloves Garlic
1/2 lb Pancetta
~20 Large Cremini Mushrooms
4 Small Slices of Day Old Como Bread
1 tbsp Panko
1 Handful Parsley
2 Sprigs Thyme
1/2 cup Olive Oil
1 tsp Balsamic Vinegar
1/2 tsp Smoked Paprika
1/4 tsp Pepper
Pinch of Salt
Instructions:
1) Rinse then dry mushrooms with a paper towel and remove the stems. Prep a sheet pan with parchment paper.
2) Cut pancetta into small cubes.
3) In a medium bowl, grate 5 cloves of garlic and mix in parmesan
4) Tear como bread into small pieces and add to mixture.
5) Mix in parsley, thyme, pancetta, olive oil, paprika, pepper and a pinch of salt. Mix together by hand
6) Place mushrooms on a tray then stuff mushrooms with mixture and drizzle with olive oil
7) Bake @ 350 for 15-20 mins until browned at the top. Enjoy!
