Coconut Cod Curry

Ingredients:
1 Onion
1 Jalapeño
1 Tomato
4 Garlic Cloves
1 lb Cod
1 Carton of Coconut Milk (32 oz)
1 tsp Ground Ginger
2 tsp Cumin
1 Lemon
Salt to taste
1 Tbsp Clarified Butter
2 tsp Curry Powder
1 cup Fish Stock
1/2 cup Cherry Tomatos
2-3 handfuls of Spinach
Instructions:
Chop all veggies. Sauté onions for 3-4 min then add tomato, garlic and jalapeños and sauté for 2-3 min longer. Add ginger and cumin. Add fish stock, lemon, salt, clarified butter, curry powder and coconut milk. Let curry simmer for a few minutes on medium low heat. Add your cod, cherry tomatoes and spinach then cook on medium heat for about 8 mins until fish is cooked. Serve over rice & Enjoy!
